Creole Chicken Gumbo

1/4 cup oil | zonnebloemolie
1/4 cup flour | bloem
1 green bell pepper, chopped | groene paprika
1 onion, chopped | ui
2 cups cooked, chopped chicken breast meat | kipfilet gaar
1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid | tomaat met chili pepers
1 (4.5 ounce) can sliced mushrooms, drained | champignons
2 tablespoons chopped fresh parsley | peterselie
2 teaspoons Worcestershire sauce | Worcestershire
3 cloves garlic, minced | knoflook
1 teaspoon soy sauce | soja saus
1 teaspoon white sugar | suiker
1/2 teaspoon salt | zout
1/2 teaspoon ground black pepper (eo) | zwarte peper
3 dashes hot sauce | hete saus

Verwarm de olie, voeg bloem toe en maak een roux.
Voeg dan paprika en ui toe, af en toe roeren
Kip, tomaat, chili pepers, champignons, peterselie, Worcestershire, knoflook, soja saus, suiker, zout, peper en hete saus.
Alles goed roeren en laten sudderen voor 20 minuten.

Creole Chicken Gumbo with Donut and Skippy

Heat oil in over high heat. Stir flour and cook, for ca 5 minutes.
Reduce heat to low and stir in bell pepper, onion.
Cook 10 to 15 minutes, until tender, stir occasionally.
Add chicken, tomatoes, green chile peppers, mushrooms, parsley, Worcestershire sauce, garlic, soy sauce, sugar, salt, black pepper (eo) and hot sauce.
Stir, cover, simmer for ca 20 minutes

You could serve this with some rice for instance …
